The best thing about growing edibles is eating them! Straight, or in a recipe, for us it’s when the hard work pays off. I’ve been hanging out for enough fruit to make passionfruit butter and we got there! This recipe was the trifecta: quick, easy and delicious.

Ingredients:
- 250g White Sugar
- 125g Butter
- 7 Passionfruit
- 2 Eggs
Method
- Gently heat butter and sugar, stirring until melted and combined, then take off heat.
- Combine eggs and passionfruit pulp with an electric beater.
- Add pulp mixture to butter and sugar, stirring over medium heat until it thickens.
- Remove from heat and place into jars. Store in the fridge.
That’s all it takes for delicious passionfruit butter. It is quite sweet, goes well on plain toast.
